Baking gone wrong

I am a pastry chef.

I have been laboring in the industry for about three years and I really love it.

I love making cakes and cupcakes for events and traveling to odd locations to make my creations. I own my own supplier so it is pressing for me to always be thinking of new ideas to keep supplier and relocale come in… Recently, I thought it would be a good idea to open a food truck so my pal and I could travel and bring our pastries to odd locations and not just stay in our cement and mortar location. I had the whole supplier plan worked out and I particularly thought I had come up with a solution to any problem my pal and I would have. However, I did not take into account the fact that my pal and I would not have a HVAC system like my pal and I did in our physical location. I thought my pal and I would be okay with the fans that came with the food truck, however my pal and I suddenly learned that it was not an sufficient substitution for an air conditioner. The first thing to suffer from the lack of air conditioner was my employees, they were constantly complaining. The next thing that suffered was our baking. I didn’t guess the air conditioner affected the way our pastries cooked. However, my pal and I could not get the cupcakes to rise and the frosting was constantly melting. I am going to have to either nix the idea of the food truck or install a HVAC system to keep everyone happy. I am not sure what would be the most cost effective at this point because a new HVAC system is entirely high-priced!
